Carbo Recette : Recette Carbo Carbonara Foodette Thym Pate Vrai

Pronounced “Caaar-bo-thaim”, this Carbonara pasta is the perfect dish for a cozy night in or a casual dinner with friends. The smooth and creamy texture of this pasta will have you coming back for seconds (and maybe even thirds).

Ingredients:

  • 1 pound spaghetti
  • 1 tablespoon olive oil
  • 6 bacon strips, cut into small pieces
  • 1 cup of heavy cream
  • 4 cloves of garlic, minced
  • 1 cup of grated Parmesan cheese
  • 3 egg yolks
  • Salt and pepper to taste

First, boil a pot of salted water and cook the spaghetti according to package instructions until it’s al dente. Once cooked, strain and reserve a cup of the pasta water.

Next, heat the olive oil in a pan over medium heat. Add in the bacon pieces and cook until crispy, about 8-10 minutes. Remove the bacon from the pan and set aside on a plate lined with paper towels.

Now, add the minced garlic to the pan with the bacon grease and sauté for about 30 seconds. Pour in the heavy cream and whisk until it starts to thicken. Add in half of the Parmesan cheese, salt, and pepper.

Separate the egg yolks from the whites and put them in a separate bowl. Whisk the egg yolks until smooth and add them to the sauce mixture. Continue to whisk until the sauce becomes thick and creamy.

Instructions:

  1. In a large pot, boil salted water and cook spaghetti according to package instructions.
  2. While the spaghetti is cooking, heat olive oil in a pan over medium heat. Add bacon pieces and cook until crispy. Remove bacon and set aside on a paper towel-lined plate.
  3. Add minced garlic to the pan and sauté for 30 seconds.
  4. Pour in the heavy cream and whisk until it starts to thicken. Add in half of the grated Parmesan cheese, salt, and pepper.
  5. Separate egg yolks from whites and whisk yolks until smooth. Add yolks to the sauce mixture and whisk until the sauce becomes thick and creamy.
  6. Add drained spaghetti to the pan with the sauce and toss until evenly coated. Add reserved pasta water if the sauce is too thick.
  7. Serve with the remaining Parmesan cheese and the bacon pieces sprinkled on top.
