Duan Weiming’s recent success has not only revitalized his acting career, but it has also helped inspire him to take charge of his health. After being diagnosed with diabetes last year, Duan started to make significant lifestyle changes that have not only improved his overall well-being but have also helped him to regain control of his life.

Ingredients

  • 1 pound lean ground beef
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 (16 ounces) can tomatoes, undrained
  • 1 can (6 ounces) tomato paste
  • 1/2 cup water
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 8 ounces elbow macaroni
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, brown beef with onions and garlic over medium heat until beef is browned, stirring to break up meat. Pour off excess fat. Add tomatoes with juice, tomato paste, water, salt, oregano, and pepper. Simmer uncovered, stirring occasionally, for about 30 minutes.
  3. Meanwhile, cook macaroni in a large pot of boiling salted water until tender. Drain well and add to beef mixture, blending well.
  4. Pour mixture into a 9x13 inch casserole dish. Sprinkle Parmesan cheese over mixture.
  5. Bake in the preheated oven for 20 to 25 minutes or until hot and bubbly.
