Salewa mes amis! Today, we have a special treat for all of my foodie friends out there. I’m talking about the delicious Tourteau! This dish is one that I grew up on, and one that I’ve always been excited to share with others. So, without further ado, here is my recipe for Tourteau:

Ingredients

  • 1 large Tourteau crab
  • 1 onion, diced
  • 1 celery, diced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of tomato paste
  • 1 cup of bread crumbs
  • 1 cup of water
  • Creole seasoning to taste

Instructions

  1. Preheat your oven to 375 degrees.
  2. Clean the Tourteau crab and remove the meat.
  3. In a large skillet, heat up the olive oil over medium-high heat.
  4. Add the onion, celery, bell pepper, and garlic. Sauté for 4-6 minutes or until softened.
  5. Add the tomato paste and cook for another 2-3 minutes.
  6. Add the bread crumbs and stir until everything is combined.
  7. Add the water and let it cook for another 3-4 minutes.
  8. Season with Creole seasoning to taste.
  9. Place the Tourteau meat in a greased baking dish and pour the stuffing mixture over the top.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
