Spanakopita Triangles
If you are wanting to impress your guests with a homemade appetizer, look no further than these Spanakopita Triangles. They are the perfect combination of flaky crust and savory filling. Not only are they delicious, they also look beautiful on any platter.
Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 10 oz frozen chopped spinach, thawed and squeezed dry
- 1/2 cup feta cheese, crumbled
- 3/4 cup ricotta cheese
- 1/4 cup fresh parsley, chopped
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, melted
- 16 sheets phyllo dough, thawed
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic and cook until onion is translucent.
- Add spinach and cook for an additional 2-3 minutes.
- In a large mixing bowl, combine feta cheese, ricotta cheese, parsley, eggs, salt, black pepper, and nutmeg.
- Add spinach mixture to cheese mixture and mix well.
- Brush melted butter on one sheet of phyllo dough, then lay another sheet on top and brush with butter.
- Cut phyllo sheets into 3 equal strips.
- Place a spoonful of spinach mixture at the bottom of each strip.
- Fold one corner of phyllo strip over filling to form a triangle, then continue to fold triangle up the strip, maintaining the triangle shape until you reach the top.
- Repeat with remaining strips and filling.
- Place triangles on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until golden brown.
- Serve warm and enjoy!
Don’t be intimidated by the phyllo dough - it can be a little tricky to work with but the end result is well worth the effort. These Spanakopita Triangles will be the hit of your next party or gathering!
