Zarzuela a la Catalana – Catalan Fish Stew
Today, we’re excited to share with you an incredibly delicious recipe from the beautiful region of Catalonia in Spain - Zarzuela a la Catalana, also known as Catalan Fish Stew. Ingredients:
- 3 tablespoons of olive oil
- 1 onion, chopped
- 5 garlic cloves, minced
- 2 red bell peppers, chopped
- 1 green bell pepper, chopped
- 1 can of diced tomatoes (14.5 ounces)
- 2 cups of fish stock (or chicken stock)
- 1 cup of dry white wine
- 1 bay leaf
- 1/4 teaspoon of saffron threads
- 1 pound of clams
- 1 pound of mussels
- 1 pound of shrimp, peeled and deveined
- 1 pound of firm white fish (cut into small pieces)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add onion, garlic, and bell peppers, and cook for about 5 minutes, stirring occasionally.
- Next, add diced tomatoes, fish stock, white wine, bay leaf, saffron, and salt and pepper to taste to the pot.
- Bring the mixture to a boil, then reduce heat to low and let simmer for about 30 minutes.
- After 30 minutes, add the clams, mussels, and shrimp to the pot. Cover and simmer until clams and mussels open up and the shrimp is cooked through, for about 5-7 minutes. Discard any unopened shells.
- Finally, add in the firm white fish and cook for another 5 minutes or until the fish is cooked through.
- Remove the bay leaf and season the stew with salt and pepper to taste.
- Garnish with fresh parsley and serve immediately.
