I recently came across an amazing recipe for Achards de légumes that I just had to share with you all. Not only is this dish delicious and easy to make, but it’s also packed with nutrients and perfect for a healthy dinner.
Ingredients
For this recipe, you will need:
- 1/2 a red cabbage, finely shredded
- 2 carrots, sliced into thin strips
- 1 red onion, sliced
- 1/2 a cucumber, sliced
- 1/2 a red pepper, sliced
- 2 cloves of garlic, minced
- 1/2 a cup of white wine vinegar
- 1/2 a cup of olive oil
- 1 tablespoon of mustard seeds
- 1 tablespoon of coriander seeds
- 1 tablespoon of turmeric
- Salt and pepper to taste
Instructions
To make this dish, follow these steps:
- In a large bowl, mix together the shredded cabbage, sliced carrots, red onion, cucumber, and red pepper.
- In a separate bowl, whisk together the white wine vinegar, olive oil, minced garlic, mustard seeds, coriander seeds, turmeric, salt, and pepper.
- Pour the dressing over the vegetable mixture and toss well to combine.
- Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight.
- When you’re ready to serve, give the veggies a good stir and enjoy!
As you can see, this recipe is incredibly simple and easy to follow. But what I love most about it is that it’s so versatile - you can easily switch up the ingredients to use whatever veggies you have on hand. Plus, by using white wine vinegar and olive oil instead of traditional mayonnaise-based dressings, you’re cutting down on calories and unhealthy fats.
So why not give this recipe a try the next time you’re looking for something healthy and flavorful to add to your dinner routine? I promise you won’t be disappointed!
Enjoy!
