Sindhi Biryani Recipe
Ingredients:
- 1 kg mutton or chicken
- 6 potatoes, chopped
- 2 cups basmati rice
- 2 onions, fried
- 4 tomatoes, chopped
- 1 cup plain yogurt
- 1 tsp turmeric
- 1 tsp red chili powder
- 2 tbsp ginger garlic paste
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tbsp garam masala powder
- 1 tbsp dried mint leaves
- 1 tsp black pepper
- 6 green chilies, chopped
- 1/2 cup cooking oil
- Salt to taste
Instructions:
- Soak the rice in water for about 30 minutes.
- Boil the potatoes in salt water until half cooked, then drain and set aside.
- In a large pot, heat the oil and fry the onions until golden brown.
- Add the ginger garlic paste and cook for about 2 minutes.
- Add the meat and cook until the water from the meat has evaporated and the meat starts to turn golden.
- Add the tomatoes, yogurt, turmeric, red chili powder, coriander powder, cumin powder, garam masala powder, dried mint leaves, black pepper, green chilies and salt. Mix well and cook for about 15 minutes on low heat.
- Add the potatoes and cook for another 10 minutes or until the meat and potatoes are fully cooked.
- In a separate pot, boil 8 cups of water with salt to taste.
- Drain the rice and add it to the boiling water.
- Cook the rice until it is 3/4th done.
- Drain the rice and layer it over the meat mixture.
- Drizzle a few drops of yellow food coloring over the rice.
- Cover the pot with a tight lid and steam on low heat for 10-15 minutes, or until the rice is fully cooked.
