Recette Morilles : Sauce Crémeuse Aux Morilles

First off, let’s take a look at the star of the show: Morel mushrooms. These delicious and distinctively-shaped mushrooms are prized by chefs all over the world for their rich, earthy flavor. They’re one of those ingredients that are hard to find fresh, but thank goodness for dried morels, which are what we’ll be using for this recipe.

Creamy Morel Mushroom SauceIngredients (for 4 portions)

  • 20g dried morel mushrooms
  • 200g heavy cream
  • 1 shallot
  • 1 garlic clove
  • 60g white wine
  • 10g butter
  • Salt and pepper to taste

Instructions

  1. Start by soaking the dried morel mushrooms in hot water for about 20 minutes, until they are soft and plump. Drain them, but save the soaking liquid!
  2. Peel and finely chop the shallot and the garlic clove.
  3. In a pan, melt the butter over medium heat. Add the chopped shallot and garlic, and sauté until they’re translucent and fragrant.
  4. Add the soaked morel mushrooms to the pan, and stir. Then, add the white wine and let it reduce for a few minutes.
  5. Pour in the cream and some of the soaking liquid (about 50-100ml). Let everything simmer for a few minutes until the sauce is thick and creamy.
  6. Season with salt and pepper to taste.
  7. Congratulations, you’ve just made a delicious creamy morel mushroom sauce in your Thermomix! This sauce is perfect to serve over steak, roasted chicken, or even pasta. Enjoy!
