Ingredients:
- 1 sheet of frozen pre-rolled puff pastry, thawed

- 3 eggs, whisked
- 1/2 cup of thickened cream
- 1/2 cup of Kalamata olives, de-stoned and halved
- 1/4 cup of parsley, chopped
- Salt and pepper to taste
Instructions:
- Preheat oven to 200°C.
- Place puff pastry into a tart tin and press into the edges, trimming off any excess pastry from around the edges.
- Using a fork, prick the base of the pastry a few times.
- In a mixing bowl, combine artichokes, feta cheese, eggs, cream, olives, parsley, salt, and pepper. Mix well.
- Pour the mixture onto the puff pastry and spread evenly.
- Bake for 30 minutes or until the tart is golden and cooked through.
