Recette Abricot : Tarte Aux Abricots

Oh la la mes amis, have I got a treat for you today! Check out this fabulously delicious Tarte aux Abricots (or Apricot Tart for those who don’t speak French). Just looking at it makes my mouth water!

Ingredients:

For the Tart Dough:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 large egg yolk
  • 1/4 cup cold water (more if needed)

For the Apricot Filling:

  • 1 lb fresh apricots, pitted and sliced into quarters
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/8 tsp salt

Instructions:

First, let’s make the tart dough. In a large mixing bowl, whisk together the flour, sugar, and salt. Add the chilled, cubed butter and mix until it resembles coarse crumbs.

Next, add in the egg yolk and cold water, mixing until the dough comes together. If the dough is too dry, add in more cold water, about a tablespoon at a time.

Once the dough is formed, shape it into a disk and wrap it in plastic wrap. Chill for at least 30 minutes.

While the dough is chilling, let’s make the apricot filling. In a medium mixing bowl, toss the sliced apricots with the sugar, cornstarch, and salt until well combined.

Preheat your oven to 375°F (190°C). Roll out the chilled tart dough on a floured surface until it is about 1/8 inch thick. Transfer the dough to a tart pan and trim the edges.

Pour the apricot filling into the tart shell and spread it out evenly. Pop it in the oven and bake for about 40-45 minutes until the crust is golden brown and the filling is bubbly and thickened.

Remove from the oven and let it cool for at least 15 minutes before slicing and serving. Voila, your Tarte aux Abricots is ready to enjoy!
