Empanadas Recipe

Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 pound ground beef
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/2 cup pimento-stuffed green olives, chopped
- 2 hardboiled eggs, chopped
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions:
1. In a large bowl, whisk together the flour and salt. Mix in the cold cubes of butter using your fingers or a pastry blender until the mixture resembles coarse breadcrumbs. Add in the water, stirring with a fork, until the dough comes together.
2. Turn the dough out onto a lightly floured surface and knead it gently until it is smooth. Flatten the dough into a disk, wrap it in plastic wrap, and let it rest in the refrigerator for at least 30 minutes.
3. While the dough is chilling, heat the vegetable oil in a large skillet over medium heat. Sauté the onion and garlic until the onion is translucent, about 5 minutes. Add the red bell pepper and cook for an additional 2 minutes.
4. Add the ground beef to the skillet and cook until browned, stirring occasionally. Add the cumin, smoked paprika, oregano, and cayenne pepper to the skillet, stirring to combine.
5. Mix in the chopped olives and hardboiled eggs. Season the filling with salt and pepper to taste. Remove the skillet from the heat and set it aside to cool slightly.
6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
7. Remove the chilled dough from the refrigerator and roll it out on a lightly floured surface until it is approximately 1/8 inch thick. Use a 5-inch cookie cutter or a round lid to cut out circles from the dough.
8. Spoon 1-2 tablespoons of the filling onto one half of each dough circle, leaving a 1/4 inch border around the edge. Brush the beaten egg along the edge of the dough and fold it over to enclose the filling, using a fork to crimp the edges shut.
9. Place the empanadas on the prepared baking sheet and brush the tops with the remaining egg wash. Bake for 20-25 minutes, until the empanadas are golden brown.
