Classic Quiche Lorraine Recipe
Ingredients
- 1 unbaked 9-inch pie crust
- 6 slices of bacon
- 1/2 cup chopped onion
- 4 Eggs
- 2 cups heavy cream or half-and-half
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
- 1/8 teaspoon ground nutmeg
- 1 cup shredded Swiss cheese
Instructions
- Preheat oven to 375˚F. Blind bake the pie crust for 20 minutes, removing pie weights or foil during the last five minutes of baking. Let cool before adding filling.
- Cook bacon in a large skillet until crisp. Remove bacon from pan and reserve one tablespoon of drippings in pan. Add chopped onion to pan and cook until softened. Set aside.
- In a medium bowl, whisk together 4 eggs, 2 cups heavy cream or half-and-half, 1/4 tsp salt, 1/8 tsp white pepper, and 1/8 tsp ground nutmeg.
- Layer the cooked and crumbled bacon and sautéed onions in the bottom of the baked pie crust. Top with 1 cup shredded Swiss cheese. Pour egg mixture over bacon, onion, and cheese.
- Bake at 375˚F for 35-40 minutes, or until quiche is set and slightly golden on top.
