Osban Plate

Ingredients
- 1 lb/500 g beef or lamb, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp coriander powder
- 1 tsp chili powder
- 1 onion, finely chopped
- 1/2 bunch parsley, finely chopped
- 1/2 bunch coriander leaves, finely chopped
- 1 cup/200 g fine bulgur wheat
- 1/2 cup/125 ml olive oil
- 1/4 cup/60 ml tomato paste
- 4 garlic cloves, crushed
- 3 cups/700 ml beef broth or water
Instructions

- In a large bowl, mix together the minced meat, salt, black pepper, cumin, coriander powder and chili powder. Add the chopped onion, parsley and coriander leaves, and knead the mixture well with your hands until it is completely combined.
- Add the bulgur wheat to the meat mixture and mix well.
- In a large saucepan or Dutch oven, heat the olive oil over medium heat. Add the tomato paste and garlic, and cook for 2-3 minutes until fragrant.
- Add the meat-bulgur mixture to the saucepan and cook for 5-7 minutes until the meat is browned.
- Add the beef broth or water to the saucepan and stir well. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes until the liquid is absorbed and the bulgur is tender.
- Remove the Osban from the heat and let it rest for 5-10 minutes.
- Fluff the Osban with a fork and serve hot, garnished with some fresh parsley and coriander leaves.
