Just in time for summer, our chefs have brought us a delightful recipe for a classic French tart. The Tarte à la Myrtille, or blueberry tart, is a perfect balance of tartness and sweetness, and a great dessert to share with friends and family. Our recipe is easy to follow, so even if you are not an experienced chef, you can still make this classic dish.
Fresh Ingredients are Key
As with all French desserts, the secret to this tart is high quality fresh ingredients. We recommend that you use fresh, organic blueberries, as they will provide the best flavor and nutrient content. You can also use frozen blueberries, but fresh is always better! Additionally, our chefs also recommend using a high-quality flour from a local mill, for the crust. This will give the crust a crisp yet tender texture and allow the flavors of the blueberries to shine through.
For the crust:
- 250g of flour
- 200g of unsalted butter, cold
- 4 tablespoons of caster sugar
- Pinch of salt
- 1 egg
For the blueberry filling:
- 500g of fresh blueberries
- 4 tablespoons of caster sugar
- 1 tablespoon of corn starch
- 1 tablespoon of lemon juice
Making the Tart
Start by preheating your oven to 180°C.
For the crust:
- Sift the flour and sugar into a mixing bowl.
- Cut the butter into small cubes and add it into the bowl.
- Rub the flour and butter together with your fingertips until the mixture resembles breadcrumbs.
- Add in the egg and mix to form a dough. Be careful not to overwork the dough.
- Clump the dough together, cover it with clingfilm, and let it rest for 30 minutes.
For the blueberry filling:
- Wash and dry the blueberries.
- In a mixing bowl, mix the blueberries with sugar, corn starch, and lemon juice.
- Set aside the mixture for 10 minutes to let it macerate.
To assemble the tart:
- Take the dough out of the fridge and roll it out to a thickness of 3mm.
- Line a 24cm tart tin with the dough, and trim any excess.
- Pierce the bottom of the crust with a fork.
- Add the blueberry mixture, spreading it evenly over the crust.
- Bake the tart for 30-35 minutes, or until the crust is golden brown and the blueberries have softened.
Let the tart cool for 10 minutes before serving, and enjoy with a dollop of fresh whipped cream, vanilla ice cream, or crème fraiche.
