Koshari Recipe: A Delicious Taste of Egypt

- Begin by cooking the lentils, black and brown, in two separate pots. Add three cups of water to each, along with salt, and bring to a boil. Reduce heat and simmer until cooked, about 25-30 minutes.
- While the lentils are cooking, slice the onions and fry them in a pan until they’re crisp and brown. Season with cumin, paprika, and salt.
- In another pot, prepare the rice with three cups of water. Cook until tender, about 20-25 minutes. Drain any excess water.
- Cook the macaroni and vermicelli in a separate pot according to package instructions.
- When all ingredients are ready, mix the lentils, rice, macaroni, vermicelli, chickpeas, canned tomatoes and red wine vinegar together in a large mixing bowl. Drizzle the olive oil over the mixture and stir well to combine.
- To serve, top the Koshari with the fried onions and enjoy!
