  3. Once the sugar has dissolved, stop stirring and let the mixture boil until it reaches 300°F (150°C) on a candy thermometer. Take it off the heat immediately.
  4. Add the baking soda to the mixture and stir quickly. The mixture will begin to foam and turn lighter in color.
  5. Pour the mixture into the prepared baking dish and smooth it out with a spatula. Let it cool and harden for 30 minutes.
  6. Break the honeycomb into pieces and serve or store in an airtight container for up to 2 weeks.
