Veggie-packed Gyoza Dumplings

Ingredients:
- Dumpling wrappers
- 2 cups chopped cabbage
- 1/2 cup sliced shiitake mushrooms
- 1/2 cup grated carrot
- 2 cloves garlic, minced
- 1 thumb-sized piece of ginger, peeled and minced
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1/4 tsp black pepper
- 1/4 tsp chili flakes
Instructions:
- Place the chopped cabbage in a colander and sprinkle with a generous pinch of salt. Let it sit for half an hour, then rinse well and squeeze out any excess water.
- In a large mixing bowl, combine the cabbage with the mushrooms, carrot, minced garlic, and minced ginger.
- Season with soy sauce, sesame oil, black pepper, and chili flakes. Mix well to combine.
- To assemble the gyoza, take a dumpling wrapper and place a small spoonful of filling in the center.
- Wrap the dumpling by bringing up the sides and pinching them together at the top.
- Repeat with remaining dumpling wrappers and filling.
- To cook the gyoza, heat a large skillet over medium-high heat.
- Place the dumplings in the skillet and cook for 2-3 minutes on each side, until the wrapper is crispy and golden-brown.
