Blackberry Cream Cheese Ensaimadas

- 1 sachet dried yeast
- 1/2 cup warm water
- 4 cups flour
- 1/2 cup sugar
- 1/2 cup butter, melted
- 1/2 cup warm milk
- 1 egg
- 1 tsp salt
- 1 tsp vanilla extract
- 1/2 cup cream cheese
- 1/2 cup blackberry jam
- Egg wash (1 egg yolk, 1 tbsp milk)
- Confectioners’ sugar for dusting
Instructions:
- Dissolve the yeast in warm water and set aside for 5-10 minutes to activate.
- In a large mixing bowl, mix the flour, sugar, butter, warm milk, egg, salt, and vanilla extract. Add in the activated yeast mixture and stir until a dough forms.
- Knead the dough on a floured surface until it becomes smooth and elastic, for about 10 minutes.
- Place the dough in a bowl and cover with a clean cloth. Leave it to rise for one hour in a warm place.
- Preheat the oven to 180°C.
- Roll out the dough into a thin sheet and spread cream cheese and blackberry jam onto it. Roll it up and cut the roll into pieces, ensuring that each piece is around 2 inches thick.
- Place the pieces of rolls onto a greased baking sheet with the spiral side upwards. Brush with the egg wash mixture and let it rise for another 15-20 minutes.
- Bake for 20-25 minutes until the top is golden brown.
- Remove from the oven and let the ensaimadas cool on the baking sheet for around 10 minutes.
- Dust with confectioner’s sugar and enjoy!
