Ingredients:

  • 2 cups of all-purpose flour
  • 1 tsp of salt
  • 1/2 of a cup of unsalted butter
  • 2-3 tbsp of ice water
  • 1lb of ground beef
  • 1/2 of a cup of chopped onion
  • 1 garlic clove, minced
  • 1 tsp of chili powder
  • 1/2 of a tsp of dried oregano
  • 1/2 of a tsp of cumin
  • 1/2 of a tsp of salt
  • 1/4 of a tsp of pepper
  • 1/2 of a cup of salsa
  • 1 egg
  • 1 tbsp of water

Instructions:

First, let’s start by preparing the dough. In a large bowl, combine the flour and salt, then cut in the butter until the mixture is crumbly. Gradually add in the ice water, a tablespoon at a time, and knead the dough until it’s smooth. Wrap it in plastic and set it aside for 30 minutes.

In the meantime, let’s make the filling. Cook the ground beef in a skillet, breaking it up into smaller chunks. Once it’s no longer pink, add in the onion, garlic, and seasoning. Cook for another 2-3 minutes, stirring occasionally. Finally, add in the salsa and mix well. Remove from heat and set aside.

Now let’s get back to the dough. Roll it out to about 1/8 inch thickness and use a circular cookie cutter or cup to cut out 4-6 inch circles. Place a spoonful of the filling in the center of each circle, leaving some space around the edges.

Beat the egg and water together, then brush the mixture around the edges of the circles. Fold the dough over the filling to create a half-moon shape and use a fork to crimp the edges together. Brush the top with the egg mixture as well.

Bake the empanadas at 375°F for 20-25 minutes, or until golden brown. Serve hot and enjoy!
