Oh my goodness, have you heard of Drunch in Mayfair? It’s an absolutely fabulous spot for brunch and drinks with friends. I was scrolling through Pinterest and stumbled upon this picture that just made my mouth water!

Delicious Brunch Treat

Can you imagine indulging in this delicious brunch treat at Drunch? The poached eggs look perfectly cooked and the bacon is crispy, just as I like it. I can already taste the hollandaise sauce and the buttery toast. Mmm!

Ingredients

  • 4 large free-range eggs
  • 8 rashers of streaky bacon
  • 2 English muffins, halved
  • For the hollandaise sauce:
  • 225g unsalted butter
  • 3 free-range egg yolks
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • salt and freshly ground black pepper

Instructions

  1. For the hollandaise sauce, melt the butter in a small saucepan over a low heat. Once melted, remove from the heat and set aside.
  2. Place a heatproof bowl over a pan of simmering water, making sure the bowl doesn’t touch the water. Add the egg yolks, white wine vinegar and lemon juice to the bowl and whisk together.
  3. Gradually add the melted butter to the bowl, whisking continually, until the sauce thickens. Season with salt and freshly ground black pepper, then remove from the heat and set aside.
  4. Grill the bacon on a hot griddle pan until crispy, then remove and set aside.
  5. Poach the eggs in a pan of gently simmering water for 2–3 minutes, until cooked to your liking.
  6. While the eggs are poaching, toast the muffins and spread with a little butter.
  7. To assemble, place two muffin halves onto each plate. Top each muffin half with a rasher of bacon, then a poached egg. Spoon over the hollandaise sauce and serve immediately.
