Canneles Recettes : Blog 75: Recettes Biscuits-cannelés

Hey y’all! We got a sweet and savory recipe for you today that is sure to have your taste buds jumping for joy - cannelés! These little French pastries are a true delight and will have you feeling like you’re sitting in a cafe on the streets of Paris. Trust us, you won’t be able to resist popping more than one. First off, let’s get into the ingredients. You’ll need: - 500 ml of whole milk - 1 vanilla bean - 2 eggs - 2 egg yolks - 200g of sugar - 50g of melted butter - 100g of flour - 1 pinch of salt - rum or rum extract Now, let’s get into the instructions. You’ll want to start by heating up the milk in a saucepan with the vanilla bean. In a separate bowl, beat the eggs, egg yolks, and sugar. Once the milk is hot, pour it into the bowl with the eggs and sugar, and mix until everything is well combined. Next, add in the melted butter, flour, and salt, and mix again. Finally, add in the rum or rum extract - this is what gives the cannelés their signature flavor. Once everything is mixed together nicely, cover the bowl with plastic wrap and let it chill in the fridge for at least 24 hours. When you’re ready to bake the cannelés, preheat your oven to 240°C/465°F. Take your batter out of the fridge and mix it gently to make sure everything is still well combined. Grease your cannelé molds (these are essential, as they give the cannelés their unique shape and texture). Fill the molds 2/3 of the way up with batter - this is important, as you don’t want them to overflow. Bake in the oven for 10 minutes at 240°C/465°F, then lower the temperature to 180°C/355°F and bake for another 50 minutes. Once they’re done, take them out of the oven and let them cool slightly before removing them from the molds. Voila! You now have delicious cannelés that will have your taste buds singing.
