Arancinis au fromage (style fondue au parmesan)

Arancinis au fromageIngredients:

  • 2 cups of risotto rice
  • 1/2 cup grated parmesan cheese
  • 2 eggs, lightly beaten
  • 1 cup flour
  • 1 cup bread crumbs
  • 1 cup of grated cheese (mozzarella or fontina)
  • 3 cups of vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Cook the rice: In a large pot over medium heat, heat 1 tablespoon of olive oil. Add the rice and cook, stirring, for 2-3 minutes until they are well coated with oil. Add 6 cups of water and bring to a simmer. Reduce the heat to low and cook, stirring occasionally, for 20-25 minutes until the rice is cooked.
  2. Add Parmesan Cheese: Once the rice is cooked, add 1/2 cup of grated Parmesan cheese and stir to combine. Allow the mixture to cool for 15-20 minutes.
  3. Form the Balls: In a large, shallow dish, whisk the eggs with a pinch of salt and pepper. In another shallow dish, mix the flour with a pinch of salt and pepper. In a third dish, add the bread crumbs. Take a small amount of the cooled risotto and roll into a small ball about 1 1/2 inches in diameter. Flatten slightly and add 1 teaspoon of grated cheese in the center. Roll the ball into a perfect sphere and repeat with remaining rice and cheese mixture.
  4. Cook the Balls: Heat the oil in a large, heavy-bottomed pot to 350 degrees F. Add the rice balls in batches and cook until golden brown, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels. Serve hot.
